Dr. Bill Schindler talks about how our modern approach to corn prioritizes convenience and profit over safety and nutrition. Early farmers discovered a process called nixtamalization that allows the human body access to corn’s nutrition, but many of the modern ways that corn is delivered to us skips this process.
